Dhaba which initially started as truck stops now has taken a very commercial look.  You will usually find dhaba on highways. Anyone who is travelling long distance including truck drivers, find these places heavenly on the roadside. Charpoys and plastic chairs, tandoors and the hot meals with dhabas mushrooming at fast place within few kilometres stretch, people started frequenting such places to taste great food of the region. However most of the present dhabas now have a very rustic ambience and very few stress cleanliness and hygiene. Highway food is a pure delight and repeat clients visit usually after several months. We have regional/local cooks and the use of fresh masala makes the food all the more tastier. Some dhabas work 24 hours in shifts on busy highways and start as early as 3 AM. Various paranthas in the mornings and extended afternoon for lunch – the food is prepared freshly and one gets to enjoy roadside tea. Over the years these dhabas have become very commercial and slowly losing taste and the flavours. But these are still popular and if you go towards NH1 you will find numbers of dhabas and most of them are always crowded.

Dhaba Food FestivalSingh Sahib is the most consistent w.r.t quality and serves delicious food from undivided Punjab. It was named after Maharaja Ranjit Singh, conceptualized and conceived by, Jiggs Kalra. This place serves food from Potohar, Lahore, Sargoda, Rawalpindi, Peshawar and Amritsar.

Their “dhaba phir se” festival which started on 27th Jan is on till 4th of February and then it will be continue till March end, every weekend.

The dhaba food festival has been running for 4 consecutive years and is considered to be one of the most famous food festivals at Singh Sahib. I have been very regular to this place. One cannot miss the crowd and the delight with which people enjoy the food. It is worth watching. We went to Singh Saheb on the 1st day of the festival and tried lot of different dishes. The best part about this festival is that every dish that you try, you will get pure dhaba taste.

Tandoori chicken and mutton seekh kebab were absolutely delicious Keema kaleji and magaz cooked on tawa is very famous on the street of Amritsar it was good to see that they have picked up this dish for the festival. The parathas are must and should be enjoyed with spicy garlic achar. Choliya chicken and mutton curry were the star of this festival.

You shouldn’t miss, Jalebi with hot milk or rabri to finish your scrumptious meal. Eating at this festival will give you the same taste that you will get at any dhaba on the highway, with pure focus on quality, taste and hygiene.
