Beat The Scorching Heat With Great Summer Menu

Summer menu is all about eating more “cooling” foods to lower body’s core temperature. They should be light, luscious, and vibrant and contain more water than most other foods.
Scorching summers, one would notprefer food that would leave you with a feeling of heaviness, but food that is fresh, seasonal, and delicious and are easily available ,can do wonders for your health and appearance as well! Keeping this in mind that summer is the most vibrant time of the year where fresh produce are bounty and the right combination can help beat the unbearable heat, Executive Chef Tanveer Kwatra prepared some special dishes at “The Latest Recipe”, which is an all-day dining restaurant of Le Meridien, Gurgaon.

Last week some bloggers were invited to try their new summer menu. As we expected, this new summer menu had lot of interesting dishes, some great salads, exciting chaat and delicious drinks to accompany.

How we started
We started with little chit chat with the PR and Communication Manager Anadita Singh and then chef joined in for the conversation. Chef Tanveer was excited about his new summer menu and he added that people love to cook food that will require minimum hassle and yet be healthy.
The Gusto food and My Take:
I generally prefer following chef’s recommendations as chef being the creator can aptly take me through the gastronomical journey, where I can not only enjoy great food, but equally share the passion as well as the churning of and thought process behind the incredible menu.
Quinoa and roasted pumpkin salad with pine nuts and goat cheese

Quinoa and roasted pumpkin salad with pine nuts and goat cheese – Quinoa is high on protein and has nice crunch and it goes really well the humble pumpkin, one of my favourite vegetable, which has little sweet flavour. Excellent and rich in protein salad!.

Cabbage and onion salad with plum avocado, seaweed and tanuki

Blow torched salmon with wakame salad and pineapple wafu dressing

Blow torched salmon with wakame salad and pineapple wafu dressing – this beautiful pink salmon stole my heart. The sweetness of wakame and the flavour of wafu( Japanese salad dressing -Japanese soy sauce, rice vinegar and vegetable oil) makes it absolutely delicious. This was for me was the dish of the day.

Chicken Oysters with wild mushrooms & Aioli

Chicken Oysters with wild mushrooms & Aioli and prawn cocktails “shrimps get wild” both were outstanding dishes and you can’t just miss them.

prawn cocktails “shrimps get wild”

Apart from palak patta chat there was Okonomiyaki for vegetarians. Okonomiyaki was something which I never tried before. It’s famous Japanese savoury pancake and was prepared with cabbage and corn and was absolutely delicious.

Mochi Icecream

We finished our afternoon lunch with the famous Japanese icecream Mochi. Mochi is considered as New Year desert in Japan and probably one of the most popular desserts not only in japan but outside the native country too. Made out of Japanese rice and sugar, outer layer is chewy and filling of icecream, inside. We tried strawberry and chocolate and both were outstanding.

Summer Menu starting from 1st of July.
